Macreddin Village Organic Brown Bread

375g Organic WholeMeal Flour500g Organic Natural Yogurt
75g Organic Black Strap Molasses or Treacle
9g Baking Powder
5g Baking Soda
3g Fine Sea Salt
1 Small Organic Egg
25mls Organic Sunflower Oi

Mix all ingredients until it forms a light, nearly runny dough, similar to the consistency of porridge . Flour a baking tin, pour in the mixture and bake at 230 degrees for 14 minutes. Then drop the temperature to 180 degress fan assissted oven - reduce to 160 degrees over the same time span and bake for an hour. Let the bread rest for 1 hour in the tine before taking it out. Allow to cool fully on a wire rack.


Ballynahinch Castle Brown Bread

Brown Bread from Ballynahinch Castle

4 ounces of plain flour
8 ounces of brown flour
250 milliliters of buttermilk
Quarter teaspoon of bread soda
Half an ounce of sugar
Pinch of salt
1.5 ounces of melted butter

Mix all dry ingredients together in a bowl. Gradually add in the buttermilk and melted butter. Mix well by hand (not in a machine) Place into greased bread tins. Bake at 175c for 1.5 to 2 hours. Take out of the tin and tap the bottom if there is a hollow sound the bread is done. Makes two breads in 1 lb tins.

Brooks' Homemade Brown Bread

150g Plain Flour250g Wholemeal Flour
25g Pinhead Porridge Oats
25g Wheat Bran
1 1/2 tsp Baking Powder
45g Reacle
500ml Buttermilk

Pre heat oven to 180 degrees. Mix all dry ingredients together in a bowl. Add treacle & buttermilk to form a runny dough. Butter a baking loaf tn, line with baking parchment. Pour the mixture into the tin. Bake for 1 hour.
