Fluffy Pancake Recipe
125g Self Raising Flour1 tablespoon Caster Sugar (optional)
Pinch of salt
1 Egg
150ml Milk
Oil for frying
Method:
Sieve flour into a bowl, stir in the sugar (if using). Add the egg and beat while adding the milk.Mix until mixure becomes smooth.
Cover and allow to stand for about an hour
Heat a little oil on a pan and drop spoonfuls of batter onto pan. When mixture is puffed and bubbling on top, turn and cook on other side.
Serve warm with your favourite berries.

Savoury Crepes
Roasted vegetables and soft creamy goats cheese of your choice
Ingredients
6 EggsPlain Flour 500g
Milk 1 LT
Pinch of salt
Making Batter: Whisk the eggs and milk together thoroughly, mix in the flour and pinch of salt until smooth. Strain in to a mixing bowl.For best results, make the batter 2 hours in advance to allow it to rest, label, cover and leave to rest in the cold room.
Top Tips for making the crepes:
Use approx. 50ml of clarified butter mixed with a little rapeseed oil for wiping the crepe pan surfaces with a paper napkin. 1 small ladle for approx. 40ml of batter mix per crepe. Work quickly this task should be completed within 15 mins. Allow the crepes to cool
- Savoury Crepes Prep Roasted Mediterranean Vegetables:
- Slice half an aubergine, 1 courgette, 1 red pepper, 1 red onion and I tomato
- Put onto baking tray, drizzle with olive oil and salt and pepper
- Bake at 173° for 25-30mins
- Serve with soft creamy goats cheese of your choice Drizzle basil and pesto all over

- 2 teaspoons of baking powder
- A pinch of Salt
- 2 large eggs
- 150ml whole milk
- 30g melted butter
- 150g buttermilk

135g Plain Flour1tsp baking powder
Half tsp of salt
130ml milk
1 Egg
2 tsp melted butter
Sieve flour and baking powder in a bowl, then add the sugar. Beat the egg and milk and then add to the mix
