The emphasis at Casey's is on fresh, local and seasonal produce. Fresh root veggies, herbs, tomatoes and fruits are grown in our organic kitchen garden. Casey’s spring water comes from a deep spring well located on the hotel grounds and home-made brown bread, scones and cookies from Ann's recipe are baked daily. They even produce there own beer on site!


Introducing - West Cork brewing Company

In December 2014, Dominic Casey, Henry Thornhill and Brewer Kevin Waugh launched the West Cork Brewing Co. in Casey's of Baltimore. The 1st Bre-Hotel to set up in Ireland. The Nano-brewery brews a number of beers; Sherkin Lass, Roaring Ruby, South X South West and The Rapids, with more brews to come.

West Cork Brewing Company believes it can add a high quality and locally produced craft beer product by using only the purist ingredients - starting with Natural Spring Water - they intend to become a firm favourite with the discerning palette of Irish Beer Lovers everywhere.

SHERKIN LASS Style— pale Ale. ABV – 4.4%

  • Flavour — Sweet, citrus, lightly bitter, refreshing.
  • Grain — Pale ale malt, flaked barley, municb malt, wheat malt, caramunich.
  • Hops — Columbus, centennial, galaxy, liberty.
  • Brewed using our own spring water.
  • Unfiltered, unpasteurised and vegan friendly as only whirlfloc (carrageenan moss) is used to aid in clarification

ROARING RUBY Style — Park Red Ale. AB V — 4.4. %

  • Flavour — Smooth toffee and caramel, hint of coffee.
  • Grain — pale ale malt, flaked oats, amber malt, caramel malt, wheat malt, roasted barley
  • Hops — Bramling Cross and liberty.
  • Brewed using our own spring water.
  • Unfiltered, unpasteurised and vegan friendly as only whirlfloc (carrageenan moss) is used to aid in clarification.

SOUTH X SOUTHWEST Style - Irish stout. ABV - 4.3%

  • Flavour — Rich coffee and chocolate, a touch of cinnamon.
  • Grain — Pale ale malt, flaked barley, flaked oats, roasted barley, chocolate and carafa Ill.
  • Hops — East Kent Goldings.
  • Brewed using our own spring water.
  • All beers are unfiltered, unpasteurised and vegan friendly as only whirlfloc (carrageenan moss) is used to aid in clarification.

THE RAPIDS Style — Rye IPA. ABV- 5.3%

  • Flavour — Subtle nutty and spicy notes, piney aroma.
  • Grain — pale ale malt, rye, cara ruby, munich, crystal 40, crystal 82.
  • Hops — Equinox and Simcoe.
  • Brewed using our own spring water.
  • Unfiltered, unpasteurised and vegan friendly as only whirlfloc (carrageenan moss) is used to aid in clarification.
